Gluten Free Cinnamon Coffee Cake
Ingredients
Streusel
- 48 g Blanched Almond Flour
- 75 g Cane Sugar
- 1.5 tsp Ground Cinnamon
- 1/8 tsp Fine Sea Salt
- 4 tbsp Cold Unsalted Butter (Cubed)
Coffee Cake
- 3 Large Eggs
- 1/4 cup Full Fat Coconut Milk (Make sure it is blended well)
- 1 tbsp Lemon Juice
- 1/4 cup Unrefined Coconut Oil
- 150 g Cane or Coconut Sugar
- 2 tsp Pure Vanilla
- 190 g Blanched Almond Flour
- 30 g Tapioca Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Fine Sea Salt
- 2 tsp Ground Cinnamon
Cinnamon Sugar
- 2 tbsp Cane Sugar
- 2 tsp Ground Cinnamon
Instructions
Oven + Pan Prep
- Preheat the oven to 350 degrees F. Grease an 8-inch square cake and line with parchment with some overhang for easy lifting out.
