Gluten Free Cinnamon Coffee Cake

Ingredients
  

Streusel

  • 48 g Blanched Almond Flour
  • 75 g Cane Sugar
  • 1.5 tsp Ground Cinnamon
  • 1/8 tsp Fine Sea Salt
  • 4 tbsp Cold Unsalted Butter (Cubed)

Coffee Cake

  • 3 Large Eggs
  • 1/4 cup Full Fat Coconut Milk (Make sure it is blended well)
  • 1 tbsp Lemon Juice
  • 1/4 cup Unrefined Coconut Oil
  • 150 g Cane or Coconut Sugar
  • 2 tsp Pure Vanilla
  • 190 g Blanched Almond Flour
  • 30 g Tapioca Flour
  • 1/2 tsp Baking Soda
  • 1/4 tsp Fine Sea Salt
  • 2 tsp Ground Cinnamon

Cinnamon Sugar

  • 2 tbsp Cane Sugar
  • 2 tsp Ground Cinnamon

Instructions
 

Oven + Pan Prep

  • Preheat the oven to 350 degrees F. Grease an 8-inch square cake and line with parchment with some overhang for easy lifting out.
